Slicing the pork

Rick of A & J Meats slices the second test of smoked Mangalitsa Bacon. The color of the bacon and amount of fat is gorgeous. This bacon is not only a “treat” it is also an ingredient.

As a strip of bacon cooks it creates it’s own cooking juices in the way of fat. This special fat is a great ingredient or the perfect oil to cook your eggs!

Though the healthy trend a few years back has been to minimize fat in our meat, especially in bacon and hamburger, the latest news is that perhaps that information is wrong. Good fat and bad fat … and bacon is definitely leaning towards being healthy! More importantly, perhaps, is that the fat is where the flavor is!
